Beet Salad

1 salad Batch Size
1 Portion per Batch
Unit Ingredients
3 oz Red Beets
3 oz Yellow Beets
3 3/4 oz Baby Spinache
3 3/4 oz Agugula
2 oz Panchetta
1 oz Goat Cheese Crumbles

Boil and peel beets. Using mandolin, slice into medallions.Dress spinache, arugula, and panchetta. Arrange 4 medallions of each color beet in a circle on the plate, alternating colors. Place dressed salad in middle of circle of beets, crumble goat cheese on top.
