Smoked Tomato Chutney

32oz Batch Size
32 Portion per Batch
Unit Ingredients
32 oz Heirloom Tomatoes
10 oz Honey
6 oz Onion
4 oz Red Wine/Cider Vinegar
 1/4 oz Coriander
 1/4 oz Clove
 1/4 oz Black Pepper
 1/4 oz Thyme
1. Smoke Tomatoes. and dice small.
2. Combined all ingredients into a pot and cook on low.
3. Cook until tomatoes have broken down and the liquids have formed a syrup.

***** The recipes are also listed in oz but remember that this is cooking and it’s all about how it taste so us it more as a guide line for what to use**** These are my ideas and recipes and have been tested by me at NECI.
