Goat Cheese Polenta

Unit Ingredients
24 oz Milk
24 oz Water
15 oz Polenta
8 oz Goat Cheese
6 oz Butter
8 oz Cream

Add milk and water to a pot and bring to a boil.

Add cornmeal to the liquid in a thin stream, whisking constantly to avoid lumps.

Reduce heat to a simmer, and cook for 15 minutes, adding salt and cream as needed to prevent over thinking.

When polenta is done, stir in butter and goat cheese. Check seasonings, and add salt to taste.
