Sweet Potato Puree

32 oz Batch Size
32 Portion per Batch
Unit Ingredients
32 oz Sweet Potato, Peeled
8 oz honey
 1/4 oz cinnamon
 1/8 oz salt
 1/4 oz nutmeg
8 oz milk

In a medium saucepan add milk, honey, salt, nutmeg, and cinnamon. Stir mixture and bring to a simmer.

Meanwhile, peel sweet potatoes and cut into medium-sized cubes. Add to the liquid and cook for 15 to 20 minutes until soft.

Once potatoes are soft, place potatoes in a food processor. Reserve the liquid and set aside. Add a little bit of the liquid and blend until smooth. If too dry, add reserved potato liquid. Season with salt and pepper, to taste, and serve.
