Beijing – Bok Bang (Peking Duck (Mandarin) Pancakes)


1 ¾ cups                             Flour, hi-gluten

¾ cup                                  Boiling water

½ cup                                  Flour for dusting/rolling

1 1/2t                                  Sesame oil



  1. Place flour in a bowl
  2. Slowly add the boiling water while mixing with a wooden spoon or chopsticks in one direction
  3. When cool enough to handle form into a ball
  4. Knead for3 minutes
  5. Allow dough to rest for 30 minutes
  6. Divide into 12 portions and roll out (see chef)
  7. Brush one side of pancakes with sesame oil
  8. Place another pancake on top of sesame oil pancake
  9. Dry cook in the wok until brown and blistering
  10. Turn and cook on other side
  11. Separate each double pancake to form two
  12. Serve with Peking Duck, Mu Shu Pork
