Chermoula (for fish and chicken)


1 ea                              Whole fish 2-3#, scaled, gutted, rinsed and dried

As needed                    Bannana leaves



1 ea                              Onion, small, minced

4ea                               Garlic cloves, minced

1/2t                              Paprika, hot or sweet

1/4 t                             Saffron

2T                                Lemon juice

1ea                               Preserved lemon, minced

½ bu                                        Cilantro, chopped

½ bu                                        Parsley, chopped

2oz                              Olive oil



  1. Combine chermoula ingredients
  2. Rub chermoula on fish, inside and out and allow to marinate for 1 hour
  3. Season fish well with salt and pepper
  4. Wrap fish in banana leaves and secure with kitchen twine
  5. Bake fish in 350 degree oven for 40 minutes or until done (depending on size of fish)
