China- Chau Mien (Fried Noodles)

Ingredients:

            Marinade

1 ½ t                            Oyster sauce

1 t                                Sesame oil

½ t                               Rice wine

1 ½ t                            Ginger, finely grated

1/2t                              Soy

½ t                               Sugar

½ t                               Corn starch

Pinch                           Salt

Pinch                           Pepper

 

4oz                              Pork, ¼ inch x 2 inch

 

Sauce

1 cup                           Chicken stock

1 ½ T                           Corn starch

1T                                Oyster sauce

1 t                                Sesame oil

½ t                               Dark soy

1t                                 Sugar

Pinch                           Salt

Pinch                           Pepper

 

8oz                              Chinese egg noodles, blanched for 20 seconds and strained and

dried thoroughly 1 hour

5T                                Peanut oil

1 ½ T                           Ginger, minced

1T                                Garlic, minced

1/3 cup                                    Dried shiitakes (or fresh), reconstituted for 30 minutes and                                            julienne

1 ½ cup                                    Garlic chives cut in 1/2 inch pieces

1 cup                           Bean sprouts

 

 

Procedure:

  1. Combine pork and marinade ingredients in a bowl and marinate 30 minutes
  2. Heat 2 tablespoons of oil in a large sauté pan to the smoke point
  3. Spread an even layer of noodles in the hot fat and brown on one side
  4. Add more oil if necessary and brown on other side repeat process with remaining noodles
  5. Cover and keep warm
  6. Heat 2 tablespoons of oil in a wok to the smoke point
  7. Stir fry ginger then garlic then pork and marinade
  8. Add mushrooms and sauce ingredients
  9. Add sprouts and chives and heat through
  10. Adjust consistency and seasoning
  11. Place warm fried noodles on a warm platter and pour mixture over, serve
