China- Gai Seung Tongken (Chicken Stock)


1 ½ qt                                 Water

1ea                                      Whole chicken (or equivalent in pieces)

1#                                       Chicken wings

1gal                                     Water

¼#                                      Ginger, peeled, smashed

3cloves                               Garlic

1 cup                                  Scallion tops/greens, rough chop

2 medium                           Onions

1 bu                                                Cilantro stems

½ t                                      White peppercorns


  1. Rinse the chicken and chicken wings well
  2. Bring 2 qts of water to a boil and place chicken and chicken wings in pot and blanche for 3 minutes, drain and discard liquid
  3. Place chicken and all remaining ingredients in a small stock pot and simmer/skim for 2 hours (or longer), season
