Dry Fried Green Beans Gan Bian Si Ji Dou


10 oz                           Green Beans, trimmed

¾ cup (3oz)                 Ground pork

2T                                Shaoxing wine

2T                                Tianjin or Ya cia, fine dice/chop

Tt                                 Soy sauce

1t                                 Sesame oil

3T                                Peanut oil


  1. Cut beans into 2 inch pieces
  2. Heat 2 tablespoons of oil in a wok
  3. Add beans and stir fry until tender, skins should wrinkle and brown
  4. Remove beans from wok
  5. Heat 1 tablespoon oil (if needed) to wok
  6. Add pork and stir fry briefly until done
  7. Add soy and wine and cook down briefly
  8. Add the preserved or pickled vegetables and cook briefly
  9. Add beans back to wok to heat
  10. Adjust seasoning and add sesame oil
