Greece- Spanikopita (Spinach and Feta Cheese Pie)



         1#                           Spinach, cleaned stemmed

1oz                         Olive oil

2oz                         Onions, minced

2T                           Dill, minced

2T                           Parsley, minced

4oz                         Feta cheese, crumbled

3ea                          Eggs, beaten

2T                           Milk

8oz                         Phyllo

2T                           Olive oil

tt                             Salt

tt                             Pepper




  1. Heat 1 tablespoon of olive oil in a skillet and sweat onions for 8 minutes
  2. Add spinach and herbs and cook until the water has evaporated, season
  3. Cool to room temp and add cheese, eggs and milk, season
  4. Prep a medium casserole by brushing with oil
  5. Prep phyllo by brushing each piece with oil, keep dough covered with a damp cloth at all times
  6. Arrange phyllo in the baking dish allowing the sheets to hang over the edge
  7. Place filling on dough in baking pan and spread evenly
  8. Fold edges of dough to cover filling
  9. Cut three slices in the top of the “pie” to allow steam to escape
  10. Brush liberally with oil and bake in a 375 degree oven for approx 40 minutes
  11. Let cool for 30 minutes before cutting
