Har dor see Shrimp toast


Shrimp Paste

½ #                  Fresh PDV shrimp.

2 tsp                 Lard

4 each              Water chestnuts

½ each             Tomato, seeds removed

2 each              Green Onion, chopped

1 t                    Ginger, minced

1 t                    Rice wine

1 each              Egg, lightly beaten

TT                    Salt and Pepper



5 each              White Bread, sliced thin


  1. Cut the crusts off of the bread, toast the bread squares in a 250 degree oven until semi-dry.
  2. Cut the squares into triangles.
  3. In a food processor pulse the lard and shrimp a few times.
  4. Add chestnuts, tomato, green onion and ginger into the food processor, process for 10 seconds.
  5. Add rice wine, beaten egg, and corn starch, Process until the mixture is smooth and has a paste texture.
  6. Spread the mixture on top of each toast point.
  7. Deep fry the points in a 350 degree wok.
  8. Place the shrimp side down for 45 seconds or until brown.
  9. Flip and toast the other side for 45 seconds or until brown.
  10. Place on paper towels, season and serve.
