Har Gow Shrimp Moons

Filling:

8 oz                                         Shrimp

¾ tsp                            Salt

¾ oz                              Minced Pork Fat

¼ cup                           Finely Shredded Bamboo Shoots

¼ tsp                            Sugar

Pinch                            White Pepper

½ Tbl                             Tapioca Starch

½ Tbl                            Shao Hsing

 

 

Wrappers:

¾ cup                           Wheat Starch

1 Tbl                             Tapioca Starch

½ cup                            Boiling Water

½ Tbl                            Lard

Procedure:

Wrapper

1. Sift Wheat Starch and Tapioca Starch into a Bowl

2. Add Boiling Water and mix quickly to cook the starch. Add lard and knead until well blended.

3. Roll into a log, cover, and let rest for 15 min

4. Cut log into 12-15 pieces. Keep covered until use. Flatten on lightly oiled Tortilla press

 

Filling

1.      Shell & De-vain Shrimp. Sprinkle with 1 tsp salt. Mix with hands and then rinse several times

2.      Dice Shrimp to Large Pea size pieces. Mix with remaining ingredients and refrigerate.

3.     Fill each wrapper with a tsp of filling. Fold in half and pinch to make the half moon shape.

4.     Steam in Bamboo Steamer for 10 minutes. Serve with appropriate dipping sauce.
