Iran- Dugh Khiar (Chilled Cucumber and Yogurt Soup)


2 large                                 Cucumbers, peeled and shredded

1clove                                 Garlic, crushed

2 cups                                 Yoghurt

2 cups                                 Buttermilk

2T                                       Mint, chopped

tt                                         Salt

¼ cup                                  Raisins

1ea                                      Scallion, minced



  1. Combine all ingredients except raisins and scallion in a food processor and pulse, but do not puree smooth
  2. Place mixture in the refrigerator to chill for 1 hour
  3. Whisk and adjust seasoning
  4. Garnish with raisins and scallions
