Java -Tempe Goreng (Fried Tempeh)


½#                               Tempeh cut 2 x ½ inch thick

1 clove                         Garlic, minced

1t                                 Salt

As needed                   Corn/peanut oil


½ cup                          Tomato, ripe, chopped

1/4tsp                          Shrimp paste (trassi)*

1 ea small                    Chili, minced



  1. Rub the garlic and salt into the tempeh and allow to rest for twenty minutes
  2. Combine shrimp paste, chili and tomato in a mortar or food processor  and mix/puree to form a paste, adjust seasoning
  3. Heat oil in a large skillet and shallow fry until golden on each side**
  4. Remove to drain on a paper towel and season (if necessary)
  5. Top tempeh with paste or serve paste as a dip


*Shrimp pastes vary in saltiness, it is best to add to taste

** Tempeh can be sautéed using a minimal amount of oil or deep fried.
