Jin Dui Sesame Seed Balls

Ingredients:

300 g                                      sweet potato

100 g                                      glutinous rice flour

3 T                                          sugar

1/2 can                                 sweetened red bean paste

1 c                                           raw white sesame seeds

Oil for Frying

 

Procedure:

1. Prepare bamboo steamer in wok. Peel and cut sweet potato into ⅛” slices. Steam sweet potato t for about 20 minutes or until very soft.

2. Mash sweet potato well while still warm. Combine glutinous rice flour and sugar. Slowly incorporate into sweet potato, kneading as you go. Once incorporated knead into dough. Divide into 10-20 equal portions for preferred size.

3. Roll piece into a ball and place into floured palm. Press into middle of dough and flatten out in a circle. Fill with 1 t red bean paste.Wrap dough around filling and reshape into ball. Repeat with remaining dough.

4. Dunk ball into water and roll in sesame seeds to evenly cover. Set aside and repeat with remaining balls.

5. Heat fryer or deep skillet with oil at low heat, deep fry sesame balls until golden brown, dish out to paper towel to drain the excess oil and sprinkle lightly with salt. Serve warm.
