Kaiware- Kappa Okizushi (Pressed Sushi with Radish Sprouts and Cucumber)

Ingredients:

                 As needed                           Sushi, prepared

As needed                           Salt

1 ea                                     Cucumber, peeled and sliced thin lengthwise using a Mandoline

1 cup                                  Radish sprouts

4ea                                      Shiso leaves, julienne

1 cup                                  Edamame, shelled, optional

3 sheets                               Nori

 

 

As needed                           Shoyu

As needed                           Pickled ginger

As needed                           Sesame seeds, toasted

 

Procedure:

Salt cucumber slices for ten minutes

Dry well

Using a mold arrange the cucumber, sprouts, shiso, sesame, edamame’ and sushi

Cover with plastic and press, remove plastic

Cut and arrange nori to fit the mold

Cover with plastic and press hard

Let sit for 30 minutes before unmolding

Cut into squares

Top with sesame seeds

Serve with pickled ginger and shoyu
