Malaysia- Fried Shallots


6ea                          Shallots, thinly sliced

1 cup                      Peanut or canola for frying



  1. Heat oil in a sauté pan and cook shallots until crisp and brown
  2. Drain on a paper towel and season
  3. Reserve fat for peanut sauce
  4. Start the shallots in cooking in oil that is 320 degrees and allow the temp to increase slowly until even browning/crisping has occurred
