Malaysia- Pickled Cucumbers with Pineapples and Onions


       2ea                               Cucumber, peeled and thinly slice

1ea                               Pineapple

1t                                 Salt

½ cup                           Water

1 ea                              Onion, sliced thin

½ cup                           Rice vinegar

tt                                  Salt

2ea                               Chilies, seeded and sliced thin


  1.  Combine cucumbers, salt and water in a bowl
  2. Work the salt into the cucumbers squeezing as you do
  3. Allow mixture to sit for ten minutes
  4. Squeeze moisture from cucumbers and discard
  5. Add remaining ingredients and mix
  6. Adjust seasoning
