Philippines-Adobong Baboy (Pork Adobo)


                 1#               Pork loin, cut into 1/2 inch cubes

10 cloves     Garlic, crushed

¼ cup          Soy sauce

1t                Black pepper

½ cup          White vinegar

1T               Vegetable oil


  1. Combine the pork, garlic, soy, vinegar and pepper in a sauce pot and let marinate for 1 hour (or more)
  2. Place pot on the stove and cook on low heat for 30 minutes until tender. It may be necessary to add a small amount of water/stock or cover the pot for a period of time
  3. Remove garlic and pork from the pot and reserve the liquid
  4. Heat the vegetable oil in a saute’ pan
  5. Brown the garlic and remove from the pan
  6. Brown the pork
  7. Combine reserved liquid, garlic and pork and simmer for 5 minutes

Serve with rice
