Philippines Lumpiang Ubod Alimango (Crab and Hearts of Palm Roll)



3ea                          Eggs

2T                           Vegetable oil

1 cup                      Cornstarch

½ T                         Salt

1 ½ cups                 Water



2T                           Vegetable oil

1T                           Garlic, minced

½ cup                      Onion, minced

1 ½ cups                 Hearts of palm, julienne

8oz                         Crabmeat

1 ½ cups                 Green beans, julienne

tt                             Patis or bagoong

To roll

As needed               Lettuce

½ cup                      Peanuts, toasted and crushed



½ cup                      Sugar

2 cups                     Water

3T                           Soy sauce

2T                           Cornstarch

tt                             Pepper



  1. Prepare wrapper batter by beating eggs
  2. Add oil, cornstarch and salt mix until dissolved and smooth
  3. Heat an omelet pan
  4. Prepare wrappers as you would a crepe (yields about 14)
  5. Reserve


  1. Prepare filling, sautée garlic and onion in oil until garlic is just browning
  2. add hearts of palm and cook until soft
  3. Add green beans and cook until tender
  4. Add crab and season


  1. Prepare sauce, combine all ingredients in a sauce pan and cook until mixture thickens
  2. Cool to room temperature before using


  1. To assemble place one wrapper on the table
  2. Place a lettuce leaf overlapping one side of the wrapper (the top)
  3. Place 3 tablespoons of filling in each wrapper and roll (see chef)
  4. Brush each roll with sauce and garnish with chopped peanuts
