Ramen Noodle and Dumpling Soup Mandu Ramyun


3oz                              Ramen noodles dry

8ea                               Mandu

6ea                               Korean rice cakes, sliced ¼ inch

8ea                               Baby bok choy, cut in half lengthwise

As needed                    Vegetable oil


4qts                              Beef /veal stock, soup strength

Tt                                 Red pepper paste

Tt                                 salt

TT                                Rice vinegar


As needed                    Sesame seeds, toasted

1 ea                              Egg, beaten

1ea                               Scallion, minced



  1. Stir fry bok choy and set aside (don’t overcook)
  2. Blanche the noodles until done and cool
  3. Combine the broth ingredients and bring to a simmer
  4. Blanche dumplings in broth
  5. Add noodles, bok choy, rice cakes
  6. Ladle into pot
  7. Top with garnishes and cover do not stir
