Scallion Pancakes


1 cup               AP Flour

2 Tbsp             Baking Powder

1 ¼ tsp             Salt

3 tbsp               sugar

1 large              egg

1 cup               coconut milk

1 ½ tsp             sesame oil

4 scallions        thinly sliced

Water               as needed



1)                  Mix all the dry ingredients together, and all the wet ingredients together. Leaving out the scallions.

2)                  Slowly add the wet mixture to the dry mixture, whisking them together making sure there are no lumps.

3)                  Add water to the mixture until it is thinned out enough to a pancake consistency, but not to thin like a crepe batter.

4)                  On a hot griddle with a little canola oil pour the pancakes to about an inch and a half diameter. Sprinkle the scallions on the pancakes as they are on the griddle before you flip them.

5)                  Once they are golden brown on both sides remove from the pan and serve immediately.
