Sweet Soy Base Jomi Ganjang


½ cup                           Water

4ea                               Garlic cloves sliced thin

1 1 inch           piece               Ginger, sliced into 1/8 inch pieces

1t                                 Black pepper, crushed, milled

1 cup                           Soy

½ cup                           Brown sugar

¼ cup                           Chinese rice wine


  1. Combine water, garlic, ginger and peppercorns and simmer for ten minutes
  2. Add remaining ingredients and boil for 2 minutes
  3. Remove from heat and cool to room temp before straining
