Thailand- Som Tam (Green Papaya Salad)



2ea                               Thai chilies, thinly sliced

2 cloves                       Garlic, minced

1 T                               Dried shrimp, soaked for thrty minutes and minced

4 cups                          Papaya, unripe, shredded/julienne

1 cup                           Long beans – 1 1/2-inch-long, cut lenghtwise

1/4 cup                                    Tamarind juice

2-3 ea /tt                      Limes, juiced

2-3 T                            Fish sauce

2-3 T                            Palm sugar,

1ea                               Tomatoes, outside julienne, inside small chop, seedless

1/4 cup                                    Peanuts, chopped, toasted




  1. Using a mortar and pestle, pound the garlic and chilies to a paste.
  2. Add the dried shrimp and long beans and pound to bruise.
  3. Place these ingredients in a bowl
  4. Add the papaya and bruised. Stir well
  5. Add the tamarind and lime juice, fish sauce and palm sugar to taste Stir
  6. Add the tomato pieces, stir with the rest of the salad.
  7.  Transfer to a serving plate and sprinkle with peanuts
  8. Serve with sticky rice, optional
