Vietnam- Bahn Khoa Xeo (Happy Pancake or Sound Pancake)

Ingredients:

2 cups                     Rice Flour

½ cup                      Coconut milk

2 cups                     Water

1 ½ t                       Turmeric

1t                            Sugar

½ t                          Salt

½ t                          Curry powder

4ea                          Scallions, minced

½ cup                      Canola oil

6oz                         Pork, minced

18ea                                    Shrimp, cleaned, cut in half lengthwise

4 cups                     Bean sprouts

1 cup                      Straw mushrooms, canned

tt                             Fish sauce

tt                             Sugar

tt                             Black pepper

 

1 ea                         Cucumber, peeled and sliced thin

1 head                     Leaf lettuce, cleaned and left in large pieces

1 cup                      Cilantro, mint, thai basil mix, cleaned and left in whole leaves

 

Procedure:

  1. Place the rice flour, sugar, fish sauce, salt and curry powder in a bowl
  2. Add the coconut milk and water to form a crepe batter
  3. Add scallions
  4. Marinate pork in a teaspoon of fish sauce for 15 minutes
  5. Prepare the pancakes by adding oil to a small  crepe pan
  6. Add a small amount of the pork, several pieces of shrimp a few mushrooms and a ½ cup of bean sprouts to the pan and cook for 30 seconds
  7. Add just enough crepe patter to cover the bottom of the pan
  8. Cook until crepe is crispy and ingredients are cooked through
  9. Leave the pancakes flat or fold over
  10. Repeat the process until all the ingredients have been used
  11. Place a crepe into a lettuce leaf and top with herbs and cucumber, serve with nuoc cham
