Vietnam – Nuoc Cham (Spicy Fish Sauce)

Ingredients:

1  clove                        Garlic, Finely minced

2  each                         Jalapeno Peppers, Seeded and finely minced

1  tablespoon                Sugar

2  tablespoon                Fresh Lime Juice, Pulp reserved

1  tablespoon                Fish Sauce

1 1/2  tablespoon                Water

1  tablespoon                Rice Vinegar

Procedure:

1.      Combine garlic, jalapenos & sugar in a mortar.

2.      Add the lime juice and pulp.

3.      Mash thoroughly (pestle), add the fish sauce, water, rice vinegar, and blend well.
