Vietnam- Rau Muong Xao Toi (Stir-Fried Water Spinach with Garlic)


                 1½#                                    Water spinach

2T                           Peanut oil

6 cloves                  Garlic, minced

1T                           Nuoc Mam, or to taste

tt                             Black pepper


  1. Wash and dry the spinach
  2. Remove leaves from spinach
  3. Pound stems flat and cut into 2 inch pieces
  4. Keep leaves and stems separate
  5. Heat oil in wok and add garlic
  6. Add stems and cook for 1 minute
  7. Add leaves to wilt
  8. Season with fish sauce and pepper
