Yakisoba (Stir-fried Chukasoba Noodles)


        6oz                      Protein, shellfish, chicken, beef, pork, egg or tofu

2 oz                     Sake

1ea                       Egg white

2ea                       Dried shiitake (soaked for 30 minutes)

As needed                        Vegetable oil

1 cup                               Cabbage, shredded

½ cup                               Carrot, julienne

¼ cup                               Bamboo shoots, julienne

2 cups                  Bean sprouts

1T                        Ginger, julienne

¼ cup                   Onion, thin sliced

8oz                      Chukasoba noodles, fresh

2/3cup                 Stock

1T                        Shoyu

2t                         Oyster sauce

1t                         Worcestershire

1t                         Sugar

Tt                         Salt/Shoyu

Tt                         White pepper


  1. Cut the protein into an appropriate size
  2. Toss protein with half of the sake, salt and egg white and allow to sit in the fridge for twenty minutes
  3. Shallow fry the protein in vegetable in a wok and reserve
  4. Pour of excess oil and stir fry the cabbage and carrots add sprouts and remove from wok and reserve
  5. Stir fry the ginger onions and mushrooms
  6. Add the noodles to coat well with oil
  7. Add the protein and vegetables to heat through
  8. Deglaze with sake
  9. Add stock, soy, oyster sauce, Worcestershire, sugar and pepper
  10. Adjust seasoning
