Yakitori (Marinated, Skewered, Grilled Chicken)


                 1#                           chicken, boneless, cut into strips

4oz                         Chicken livers, rinsed and dried, optional

3ea                          Scallions, cut into 2 inch pieces

12ea                                    Skewers



1 cup                      Shoyu

¾ cup                      Sugar

1T                           Honey

1T                           Mirin



Tare (sauce)

¼ cup                      Mirin

¼ cup                      Sake

¼ cup                      Shoyu

¼ cup                      Sugar


  1. Combine meat and livers and marinade and let marinate overnight
  2. Soak skewers in water overnight
  3. Skewer, scallions and marinated meat
  4. Combine sauce ingredients
  5. Grill skewers
