Yakitori (Marinated, Skewered, Grilled Chicken)

Ingredients:

                 1#                           chicken, boneless, cut into strips

4oz                         Chicken livers, rinsed and dried, optional

3ea                          Scallions, cut into 2 inch pieces

12ea                                    Skewers

 

Marinade

1 cup                      Shoyu

¾ cup                      Sugar

1T                           Honey

1T                           Mirin

 

 

Tare (sauce)

¼ cup                      Mirin

¼ cup                      Sake

¼ cup                      Shoyu

¼ cup                      Sugar

Procedure:

  1. Combine meat and livers and marinade and let marinate overnight
  2. Soak skewers in water overnight
  3. Skewer, scallions and marinated meat
  4. Combine sauce ingredients
  5. Grill skewers
