Zarda (Sweet Yellow Rice)



¼ teaspoon                  Saffron Threads

2 tablespoon                Warm Milk

1 cup                           Basmati Rice

2 tablespoon                Ghee

1 each                          1″ Cinnamon Stick

4 each                          Cardamom Pods

1 1/3 cup                     Water

To Taste                      Salt

3 tablespoon                Sugar

2 tablespoon                Almonds, chopped

2 tablespoon                Raisins


  1. Crumble saffron into milk and infuse for 20 minutes.
  2. Wash and drain rice several times.  Soak rice in water for 30 minutes.  Drain well.
  3. Heat ghee in pot.  Put in cinnamon and cardamom.  Stir for a couple seconds.
  4. Add rice, water, salt, saffron mixture, sugar, almonds, and raisins.  Stir gently.  Cover and place in a 300F oven for 20 minutes
  5. Fluff rice and adjust seasoning
