Zardalu (Dried Apricot Dessert)



1 ½ cup                       Dried Apricots

1 cup                           Water

½ cup                          Sugar

1 cup                           Heavy Cream

1/3 cup                                    Almonds, toasted, chopped


  1. Put apricots and water in a pot.  Bring to a boil.  Simmer until apricots are very soft (about 30 minutes).  Drain.
  2. Place apricots and sugar in a food processor and blend to form a smooth paste
  3. Cool mixture to room temperature
  4. Whip cream to still peaks.  Fold cream into apricot mixture, leaving it slightly marbled.
  5. For serving, garnish nuts.
