Pakoras (Fritters)


2 cup                           Besan (chic-pea flour)

As needed                   Water

1 tablespoon                Coriander

1 tablespoon                Cumin

½ teaspoon                  Black Pepper

½ each                         Lime/Lemon

3 tablespoon                Cilantro,chopped

To Taste                      Salt

1 head                         Cauliflower

2 each                          Large Carrots

As needed                   Veg Oil for frying


  1. Blanche the cauliflower, shock and cut into small florettes, reserve.
  2. Slowly add water to besan to make a medium thick batter.
  3. Ground and add the spices.
  4. Add lime juice and cilantro.
  5. Add salt.
  6. Shred carrots using the box grater.
  7. Place half the batter in a separate bowl.
  8. Add the cauliflower to one bowl and the carrots to the other, mix well to coat the vegetables.
  9. Fry individual pieces of cauliflower and spoonfuls of carrot mixture until golden brown and cooked through
  10. Drain on half sheet pan lined with paper towels, season.

Note: the cauliflower and carrots can be mixed (along with other vegetables) before deep frying provided the cauliflower is cut into ½ inch pieces or smaller
