Saag Aloo (Spinach with Potatoes)


¾ cup                          Water

2 pound                       Spinach

1 each                          Onion, sliced thinly

4 tablespoon                Vegetable Oil

pinch                           Ground Asafetida

2 teaspoon                   Black Mustard Seeds

2 clove                         Garlic  minced

4 each                          Potatoes, peeled and cubed (3/4″)

¼ teaspoon                  Cayenne

To Taste                      Salt and Pepper


  1. Parboil spinach.  Drain.  Press out most of liquid.
  2. Heat oil in small rondeau
  3.  Add asafetida, cook 2 seconds.  Add mustard seeds and pop.
  4. Add onions and garlic.  Stir-fry 2 minutes.
  5. Add potatoes and cayenne.  Stir-fry for 2 minutes.
  6. Add salt and 2T water.
  7. Cover and simmer until potatoes are done.
  8. Fold in spinach
  9. Adjust seasoning
