Tamartar Murumba (Sweet Red Tomato Chutney)



1 pound                       Tomatoes, small diced

5 ounce                        Water

8 ounce                        Sugar

1 clove                         Garlic, chopped

3 leaf                           Bay Leaves

5 ounce                        Distilled White Vinegar

1 teaspoon                   Nigella seed

1 pinch                                    Cayenne


  1. Place the water and sugar in a sauce pan and dissolve completely on low heat.
  2. Raise the heat, add all remaining ingredients, and bring to a boil.
  3. Immediately lower heat to achieve a gentle rolling simmer.  Reduce and caramelize, about 20 minutes or when it reaches a syrupy texture.

Remove from heat and cool.
