Seitan (Two Ways)


1 1/2 C                                     Vital wheat gluten

1/4 C                            Nutritional yeast flakes (optional)

1/2t                              Asafetida*

1 C                               Water, vegetable stock, tomato broth, whey (or a combination)

3 T                               Soy sauce

Simmering broth

3 C/as needed water or vegetable stock, seasoned with salt or soy


  1. Combine dry ingredients in a medium mixing bowl
  2. Combine liquid ingredients in a small mixing bowl
  3.  Pour liquid into dry ingredients, mix well to form a dough, adjust consistency
  4. Knead the dough directly in the mixing bowl for about a minute
  5.  Slice the dough into three pieces
  6. Place the dough pieces into the vegetable broth and bring to a simmer
  7. Cover and cook on low heat for one hour
  8. Turn the gluten pieces during cooking
  9.  Let cool in broth uncovered or strain for immediate use

Reserve liquid for other uses


*Other seasonings may be used

Seitan Method 2


5 cups                          AP flour

2 cups                          Water

2T                                Salt


  1. Mix dough by hand or in a kitchen aid mixer to form a dough
  2. Adjust consistency as needed
  3. Allow dough to rest for 30 minutes
  4. Place dough in a colander and rinse until water runs clear (5 minutes)
  5. Re-form dough into a ball
  6. Apply desired cooking method or simmer and reserve
