 1 cup                                       Beans, cannellini or similar bean

4 cups                                      Water

1 cup                                       Tomatoes, chopped

8 cloves                                   Garlic

1 ea                                          Bay leaf

2 sprig                                      Rosemary (or 5 leaves of sage)

1-4oz end piece                                   Prosciutto or other cured ham product* (optional)

1-4oz   piece                            Parmigiano rind (optional)

Tt                                             Salt

As needed                                Parsley, chopped fine (for garnish)



  1. If available use a terra cotta bean pot or use a medium sauce pot
  2. Rinse beans well and place in the pot with all ingredients except the salt
  3. Simmer on very low heat skimming occasionally until tender (4 hours)
  4. Add water if necessary
  5. Season about half way through he cooking process
  6. Serve with a little of the broth, black pepper and good oil or reserve for other preparations
