Oaxacan Chocolate Mole

Ingredients

5ea                               Ancho Chiles (toasted)

3ea                               New Mexico Chiles (toasted)

3ea                               Dried chiles negros (toasted)

1/3 cup                                    Sesame seeds

3/4 teaspoon                Anise

1/2 teaspoon                Cumin

1/2 teaspoon                Coriander

2ea                               Cloves

12ea                             Black peppercorns

1                                  Cinnamon stick

As needed                    Olive or sunflower

2 1/2 Tablespoons       Raisins

10                                Whole almonds

1/3 cup                                   Pumpkin seeds

5                                  Plum tomatoes

5                                  Garlic cloves, minced

1                                  Onion, halved, grilled and small dice

5 cups                          Vegetable Stock

3 1/4 ounce                  Mexican Chocolate

Procedure:

 

  1. In bowl combine Chile peppers with hot water to stand for 30 min. In large skillet combine spices and toast. Stir until fragrant. Put spices in spice grinder.
  2. In same skillet add trace of oil raisins pumpkin seeds and cook until raisins are plump. Transfer to another bowl.
  3. Add tomatoes to skillet cook until blister. Transfer to bowl.
  4. Cook garlic and onion then transfer to bowl
  5. Add oil to pan add vegetables and spices , then add chilies and vegetable stock.  Simmer for 1 hour. In batches mix contents in a blender till smooth then return to the heat and add chocolate and salt and pepper to taste.
