Quinoa and Butternut Squash Salad

Ingredients:

6 Tablespoons                         Champagne vinegar

3 Tablespoons                         Sesame vinaigrette

2 Tablespoons                         Honey

2 Tablespoons                         Soy

1 Tablespoon                           Ginger, grated

1#                                            Butternut squash, small dice*

2 cups                                      Shredded greens or cabbage*

1 ½ cups                                  Quinoa

½ cup                                       Parsley, chopped

14/cup                                     Chives, chopped

½ cup                                       Almonds, toasted and chopped

2 ea                                          Mango *

Procedure:

  1. Start by washing the quinoa well in several changes of water in a fine strainer. Place on a 1/2 sheet tray and toast in 350 degree F oven until dry and a few shades darker. Be careful not to overcook
  2. Bring 4 quarts of salted water to a boil. Add the quinoa and cook until done. Look for the “tail” on the quinoa begin to release. Be careful not to over cook or it will be mushy. This will take 10-15 minutes. Cool on a sheet pan with a bit of oil in the refrigerator.
  3. Mix the vinegar, oil, soy sauce, honey, ginger, and orange juice until well combined.
  4. Blanch the squash a few minutes until just slightly done. Shock in ice water. Remove and reserve until the final assembly.
  5. Combine the quinoa, sweet potatoes, chives, and dressing. Taste. Season with salt and pepper to taste

Notes:

*Any winter squash can be substituted as can sweet potatoes

* Local peaches can be substituted for the mango

* This recipe works well with mizuna, napa cabbage and arugula
