Roast Cauliflower with Pea Sprouts


1 head                                      Cauliflower

3 oz                                         Pea Shoots*

1 tablespoon                            Olive oil

1tsp                                          Orange zest

2 Tablespoons                         Orange juice, fresh squeezed

To taste                                                Salt

To taste                                                Black pepper


  1. Cut the cauliflower into 2 inch pieces utilizing as much of the core as possible
  2. Place cauliflower in a large bowl and add 2tsp of olive oil and season with salt
  3. Heat a large skillet on the stove top and add the cauliflower. Cook for two minutes before placing in a 375 degree oven
  4. Cook for approximately 25 minutes tossing at least once during the cooking process
  5. Remove from oven when cauliflower is well browned and soft
  6. Place the pea sprouts into the same large mixing bowl used to toss the cauliflower. Add the cooked cauliflower and toss with the sprouts to wilt them
  7. Add Olive oil, orange zest, orange juice, salt and black pepper to taste
