Savory Cheesecake

Ingredients:

6-8oz                           Cheese*

½ cup                           Cheese, fresh, ricotta, fromage blanc or cottage

2 ea                              Eggs

1T                                Flour

1T                                Fines herbes

½ cup                           Heavy cream

To taste                                    Salt

To taste                                    Pepper

as needed                     Cracker or brioche crumbs

as needed                     Butter, melted

Procedure:

  1. Process cheeses until smooth
  2. Add flour and eggs and process until incorporated
  3. Add cream and seasonings and process briefly
  4. Combine crumbs and melted butter to form a moist mixture
  5. Press crumb mixture into the bottom of a spring form pan
  6. Pour cheesecake mix into pan and bake at 350 degree for approximately 40 minutes

Notes:

  • Most local cheeses will work for this recipe including mild goat, gorgonzola (domestic), cheddar and brie or additional fromage blanc or other fresh made cheese.
  • Winter squash puree can be substituted for all or part of the cheese or cream in this recipe
  • This mixture can be prepared as a traditional soufflé by whipping the egg whites and folding them into the base
