Creamy Mustard Dill Dressing

Ingredients:

4 oz                                         Ricotta or cottage cheese (low or no fat)*

6 oz                                         Non-fat yogurt

5 Tablespoons                         Lemon juice

1 Tablespoon                           Lemon zest, micro-planed

3-4 Tablespoons                      Dijon mustard

1Tablespoon                            Horseradish, prepared

½ teaspoon                              Celery seed, toasted and crushed in a mortar and pestle (optional)

2 Tablespoons                         Red onion, minced

3Tablespoons                          Dill, chopped

3oz                                          Vegetable stock, tomato broth or skim milk

tt                                              Salt

tt                                              Pepper

Procedure:

  1. Combine all ingredients except broth in a bowl and whisk until incorporated
  2. Adjust consistency with stock
  3. Adjust seasoning
  4. Refrigerate

Notes:

If you use cottage cheese it should be pureed in a food processor prior to adding. You may substitute no-fat buttermilk or skim milk for the stock or broth. Seasonings may need to be adjusted.  You can always place this dressing in a blender or food processor to puree if the ricotta seems grainy.
