Sherry Vinaigrette


1 ea                                          Plum tomato, roasted, skin and seeds removed

4 cloves                                   Garlic, roasted

1tsp                                          Thyme, fresh

¼ cup                                       Tomato broth

1 Tablespoon                           Olive oil

1 ½-2 Tablespoons                  Sherry vinegar

tt                                              Salt

tt                                              Pepper


  1. Combine tomato, garlic and thyme in a small processor and puree
  2. Add tomato broth and puree
  3. With the processor running add olive oil
  4. Add sherry vinegar and salt and pepper to taste
  5. Adjust consistency with both if necessary


This dressing utilizes the tomato and garlic to form and emulsion with very little fat. For a thinner dressing add additional broth. If the dressing separates simply shake to re-emulsify.
