Roast Pepper Pesto


3 small                                     Red Peppers, roasted, peeled and chopped (about 1 ¼ cups)

3/4 cup                                                Basil, picked, washed and dried, thinly sliced

1/4 cup                                                Pine nuts, toasted and chopped fine

1/2 cup                                                Roast Garlic

1 Tablespoon                           Olive Oil

tt                                              Salt, optional


  1. Place in the bowl of the processor and puree briefly
  2. Add garlic and pulse to incorporate
  3. Add nuts and pulse to incorporate
  4. Add basil and pulse to incorporate
  5. Add oil pulse several times to incorporate.
  6. Season


Peppers must be soft/cooked through. If they are not, place in a pan on the stove and cook on low heat, adding a tablespoon of water if needed. Yellow peppers may be substituted for the red. Other herbs or greens can be used in place of, or with, the basil. Mixture should be slightly chunky.
