Ricotta al Forno

Ingredients:

2cups                           Low or no fat ricotta

tt                                  Salt

trace                             Olive oil

Procedure:

  1. Place parchment paper on a sheet pan an spray or lightly brush olive oil
  2. Place ½ teaspoons of ricotta onto the parchment and lightly season
  3. Place tray in a 350 degree oven and cook until cheese becomes dry and just starts to brown lightly *
  4. Allow to cool slightly before use

Notes:

The moisture content of ricotta can vary. The process will take less time if the ricotta is allowed to drain in a colander in the refrigerator over night. A dehydrator can also be used to dry the cheese.
