Corn Blini



1 cup               Milk

2T                    Dry yeast

2T                    Sugar

3ea                   Egg yolks

4oz                  Soft butter

½ cup               Flour, AP

½ cup               Corn meal, fine grind

4ea                   Egg whites

tt                      Salt

tt                      White pepper



  1. Heat milk to 110 degrees
  2. Pour milk over yeast and sugar and let bloom for ten minutes
  3. Add soft butter and egg yolks to cooled mixture
  4. Add dry ingredients (flour/cornmeal) to form a batter
  5. Whip egg whites to soft peak
  6. Season batter and fold in egg whites
  7. Cook blinis on a griddle or in a hot pan (half dollar size)
