Refrigerator Pickles


30 pieces (approx 6#)  Pickling Cucumbers 4-6 inches

Pickling liquid:

7 ½ cups                      Water

2 cups                          White vinegar

3 cups                          Cider vinegar

½ cup + 2T                  Kosher salt

5T                                Sugar

5 ea                              Cloves, whole

3 small                         Bay leaves


½ ea                             Onion, medium

1 stalk                          Celery, sliced thin*

1/2 ea                           Carrot, sliced thin

5 ea                              Garlic cloves

1 ½ bunch                    Dill

5 sprigs                                    Thyme


  1. Bring a large marmite of water to a boil
  2. Add cucumbers and immediately remove from the heat
  3. Strain into a colander and rinse under cold water for 3 minutes, reserve
  4. Combine pickling liquid ingredients and bring to a boil
  5. Place cucumbers and garnish ingredients into an appropriate container and pour hot liquid over and let cool at room temperature
  6. Cover, label and place in the fridge.
