Sweet Tomato Jam



1#                                Tomatoes, small dice

5oz                              Water

8oz                              Sugar

1 clove                         Garlic, minced

3                                  Bay leaves

5oz                              White vinegar



1. Place water and sugar in a saucepan and dissolve on low heat

2. Add remaining ingredients

3. Simmer until a syrup consistency is achieved

4. Preserve in jars or cover, label and refrigerate
