Brandied Cherries


3#                    Cherries, pitted but whole

2 cups              Sugar

1 ½ cups          Water

2T                    Lemon juice

1 ¼ cups          Brandy

pinch               Salt



  1. Combine sugar, water and lemon in a saucepan and bring to a simmer to dissolve sugar
  2. Add brandy and remove from the heat*
  3. Fill sterilized jars with cherries leaving ½ of space at the top
  4. Cover with liquid and seal with lids
  5. Process in a boiling water bath for 20 minutes
  6. Cool at room temperature
  7. Store in the pantry
  • Taste and adjust sweetness as brandies vary, do not dilute brandy unless jars are to be stored in the refrigerator
