1 tbsp.              Butter
1 tbsp.              Vanilla extract
4                      Eggs

2                      Egg yolks
3/4 cup                        Confectionary Sugar
1 1/4 cups        Milk

1 cup               Heavy cream
Pinch               Salt
½- cup             Flour
as needed         Fresh cherries or preserved cherries

As needed        Confectioners’ sugar to garnish



  1. Preheat oven to 375° and butter a 9” cast-iron skillet or baking dish (glass pyrex)
  2. Combine vanilla extract, eggs, sugar, milk,, and salt in a bowl. Whisk in flour until smooth, about 1 minute
  3. Pit and halve cherries (drain well if using preserved) and arrange in the buttered dish
  4. Pour batter over top. Bake until a skewer inserted into batter comes out clean and a golden brown crust has formed on top and bottom of clafouti, about 30 minutes. Dust with confectioners’ sugar when room temp.

* If using brandied cherries combine preserving liquid and sugar and reduce to a syrup to be used in the batter or as a sauce/glaze
