Blueberry Buckle


2 cups              Sugar

½ cup               Butter, room temp

2ea                   Eggs

1 cup               Milk

2 cups              Flour, AP

3t                     Baking powder

1t                     Vanilla

4 cups              Blueberries

1/3 cup            Flour



½ cup               Brown sugar

1/3 cup                        Flour

½ t                   Cinnamon

¼ cup               Butter, cold small diced



  1. Using the kitchen aid mixer with the paddle attachment cream butter and sugar
  2. Add eggs one at a time
  3. Combine dry
  4. Add/alternate dry and milk to butter-egg mixture
  5. Toss blueberries with the remaining 1/3 cup of flour
  6. Fold berries into batter
  7. Cut/mix the topping ingredients together to form a “crumb” mixture
  8. Butter and flour a 9×13 pan
  9. Place batter in pan and bake in a 350 degree oven for approx. 45 minutes until set and golden
